Vegan Banana Bread


Banana Bread is an all-time classic favorite. Here goes the recipe for a new take on Banana Bread with Vegan twist.

Ingredients:

  • ·        Ripe Bananas – 2
  • ·        Plain Flour (Maida) – 1 and ¼ cups (1 cup = 240ml)
  • ·        Powdered Sugar – ¾ cup
  • ·        Flaxseed Powder (Vegan option) – ½ cup or Eggs – 2
  • ·        Coconut Oil (Vegan option)- ½ cup or Butter – 200 grams
  • ·        Baking Powder – 1 Tsp
  • ·        Baking Soda – 1 Tsp
  • ·        Vanilla Extract or Essence -1 Tsp
  • ·        A pinch of Salt



Instructions:

  • ·Preheat the oven to 180°C for 10 minutes.
  • ·Mix the dry ingredients such as flour, salt, baking soda and baking powder together.
  • ·Mash the bananas using fork. Do not over mash. A few chunks would do good in the bread.
  • ·Mix the wet ingredients of Oil (or butter), essence, Flaxseed powder (or eggs) with powdered sugar.
  • ·Mix mashed banana with the wet ingredients.
  • ·Combine both dry and wet ingredients. Don’t over mix.
  • ·Pour the mixture into loaf after coating the pan with some oil (for the bread to come out easily after baking)
  • ·Bake at 180°C for 30 to 35 min. Use a toothpick to insert and check if it comes out clean. If not, bake for 5 more minutes.
  • ·Let it cool completely before serving.

 

Notes:

Can add chocolate chips, almonds, cherries or any other nuts for enhanced flavor.
